Asian Shrimp and Ginger Fritters with Sweet Chili Dipping Sauce Recipe
Ingredients:
1 lb uncooked medium shrimp, peeled and deveined
2 1/2 tablespoons finely chopped ginger
1 egg
2 1/2 cups coarse fresh breadcrumbs
4 teaspoons fish sauce
1/2 cup coconut milk
vegetable oil, for deep frying
1/2 cup cilantro leaf, chopped
Sweet Chili Dipping Sauce
1 teaspoon finely chopped hot red chile
1/4 cup rice wine vinegar
1/4 cup hot water
2 tablespoons fish sauce
2 tablespoons sugar
1 teaspoon minced garlic
1 kaffir lime, juiced
Preparation:
Place the coconut milk and breadcrumbs together in a bowl; set aside. Place the ginger, shrimp meat, egg, cilantro and fish sauce into a food processor and pulse until the mixture is combined (do not overmix or it will turn into a paste). Add the breadcrumbs that have absorbed all the coconut milk and pulse until just blended. In a deep fryer, heat the vegetable oil over high heat. Drop rounded tablespoons of the mixture into the hot oil. Cook, in batches, for about 2 minutes (until golden brown on all sides). As the fritters cook, remove them from the oil with a slotted spoon, drain on kitchen paper, and keep warm in a low oven.
To make the sweet chili dipping sauce: Place all the sauce ingredients in a blender and blend until smooth and the sugar is dissolved. Serve the dipping sauce in a small bowl to accompany the Asian shrimp and ginger fritters.
