Cajun Corn and Shrimp Chowder Recipe
Ingredients:
1/2 cup butter
1/4 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1 medium onion , chopped
1/2-1 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2-1 teaspoon garlic salt
1/4 cup all-purpose flour
1 envelope lipton golden onion soup mix
1/2 teaspoon dried thyme
3 cups boiling water
3 cups corn kernels (fresh cut or frozen and thawed)
3/4-1 lb shrimp , peeled and deveined
1/2 cup heavy cream

Dan’s Jambalaya Recipe
Ingredients:
2 teaspoons salt
1/4 cup oil
8 skinless chicken thighs
1 lb andouille sausages or 1 lb chorizo sausage, cut into 1/4-inch slices, I use Chorizo
1 tablespoon tony’s creole seasoning
2 large celery ribs, chopped
1/2 cup bell pepper, chopped
2 large onions, chopped
1 (8 ounce) can tomato sauce
1 teaspoon salt
3 garlic cloves, chopped
1 (14 1/2 ounce) can diced Rotel Tomatoes, with chili’s such as Ro-Tel
2 cups rice, cooked in
4 cups chicken stock
1/2 lb fresh shrimp, cleaned and shells off
2 tablespoons parsley, chopped
2 tablespoons green onion tops, chopped

The Other “shrimp Cocktail” Recipe
Ingredients:
2 bottles Clamato juice, cocktail or 2 bottles V8 vegetable juice
2 1/2 lbs shrimp , preferly the medium ones
1 1/2 large hot house tomatoes , cut and diced into 1 inch squares
2 cucumbers , cut and dice into 1 inch squares
1/2 bunch cilantro , cut and diced (including stems)
1/4 cup ketchup
5 lemons
5 limes
2 avocados , cut and diced into 1 inch cubes
1 bunch celery , cut and diced into 1 inch squares
1/2 white onion , cut and diced into small tidbits
1 1/2 teaspoons salt (more or less according to personal taste)
1/2 teaspoon white pepper (optional)
1 bottle of tapatio hot sauce (to add as you like some spiciness) (optional)
1 box saltine crackers
